  8. Hot Crawfish Dip

  10. 1 stick butter
  11. 1 small bunch green onions
  12. 1 handful chopped parsley
  13. 2 t. flour
  14. 1 pt. cream
  15. 1/2 lb. grated Swiss cheese
  16. 1 T. sherry
  17. red pepper and salt to taste
  18. 1 lb crawfish tails
  19.  
  20. Melt butter, saute onions and parsley. Stir in flour, then gradually add
  21. cream, stirring until thick. Meanwhile, saute crawfish tails in butter in a
  22. separate skillet for 5 minutes. Add grated cheese to cream mixture; when
  23. melted, add sherry and crawfish and season. Serve hot on crackers.
